Banana “Nice-Cream”


Craving ice-cream – stop right there!

Before you reach for the tub of Ben’n’Jerrys have a think about this… 1/2 cup of ice-cream, so that’s about two small scoops will take roughly 1hour 30minutes of walking, or 1hour 15minutes jogging,  at 3mph, to burn off! Not only that but ice-cream is packed with sugar and all sorts of additives that do our bodies no good. Instead, opt for this super easy and super healthy dairy and sugar free “nice-cream”.

All you need is:

  • Bananas peeled and frozen (keep in freezer bags so you can quickly grab them ready-to-use for this recipe or smoothies when needed)
  • Coconut cream (optional)
  • Toppings of choice, e.g.: cacao nibs, fresh berries, toasted nuts, coconut flakes, cinnamon

Take frozen bananas from freezer and allow to thaw slightly for 5-10minutes then place in a blender on high power (this may be a little noisy!) and blend to creamy consistency.

If you want to make this recipe really indulgent you can add some coconut cream which goes great with the banana flavour and makes it much richer, but is completely not necessary unless desired.

Serve and enjoy immediately with the toppings of your choice!

Additional Options:

I have made this recipe in a number of variations including adding cacao powder or in the picture below, fresh mint leaves when blending and some coconut flakes.

Why not do like me and add fresh mint leaves and some cacao nibs and have your own Mint-Chocolate-Chip Nice-Cream! 🙂

Banana ice cream

I have also been known to make this recipe for breakfast and top it with toasted oats and fresh fruits as seen below. Who said you can’t have dessert for breakfast?
